Butterfly cakes
The first butterfly cakes I ever made were from a recipe my grandma gave me. I love baking anything from her old recipes so was eager to try them. Really, butterfly cakes are just jazzed up plain iced cupcakes but there’s something just so delicate and pretty about them. My theme for the baby shower last week was definitely elegant and pretty so of course there had to be butterfly cakes. They’re a cinch to whip up and make the perfect afternoon tea treat or feature on a high tea stand.

Cut out the top of the cupcake
To make butterfly cakes, start by making a batch of your favourite cupcakes. You can use any recipe you like. I made mine with my tea cake recipe with a little less milk than usual and a bit of extra vanilla extract.
Once the cakes have cooled, you need to get out a pointy-tipped serrated knife. Starting just in from the side of the top, cut a shallow cone shape out of the top of the cake and set the cut out piece aside.

Icing and wings
Spoon a blob of butter-cream icing or whipped cream into the hole in the top of the cake. Cut the piece that you removed in half and replace the two halves on top of the cake to form the wings.

Icing sugar dusting
Dust them all in icing sugar just before you’re ready to serve them. Aren’t they pretty?

Baby jellies
Baby jellies are a super easy and really inexpensive dessert to do for large numbers and they look really pretty. All you need is a whole lot of little ramekins in whatever shape you like. Make the jelly according to the packet directions but reduce the liquid content by 1/4.
Leave them to set in the fridge.

Baby raspberry jellies
To decorate them you can take the easy or the super easy way. The easy way is to use home-whipped cream. The super easy way is to use whipped cream in a can. Don’t judge me but I took the super easy way. It made it so quick to decorate the jellies and so pretty! I popped a little pink chocolate (leftover from making cake pops) on the top and they were good to go. Don’t add the cream and decoration until just before serving time though.
